seeded, diced tomatoes (ripe but firm)
minced garlic
chopped cilantro
diced red onion
diced jalapeño (remove seeds & membrane for milder flavor)
juice of lime
large head of iceberg lettuce, washed and cut into quarters (wedges)
BRIANNAS Creamy Blue Cheese Dressing
blue cheese crumbles
Mix all pico ingredients 1-6 together and chill. Keeps in airtight container for 2 days. Makes about 1 1/2 cups.
Place one chilled lettuce wedge on salad plate and top with BRIANNAS Creamy Blue Cheese Dressing.
Spoon pico de gallo over all and top with cheese crumbles.
Makes 4 servings. Muy rico!
