Directions

Step 1

Preheat the oven to 425 degrees to roast the beets. Wrap each beet in foil and bake until beets can be poked with a fork (about one hour).

Step 2

After the beets have cooled, cut them into bite sized pieces.

Step 3

Add arugula, feta, blueberries, beets, and walnuts to a bowl.
