Directions

Step 1

Preheat your air fryer to 400F

Step 2

Toss the cubed sweet potatoes with olive oil, paprika, salt, and pepper. Spread them evenly in the air fryer basket. Roast for 10–14 minutes, flipping halfway, until golden and tender

Step 3

While the potatoes roast, rinse and dry the arugula

Step 4

In a serving bowl, layer the arugula, then add the roasted sweet potatoes, goat cheese, pomegranate seeds, and pecans

Step 5
