Ingredients

1 16 oz. can

½ cup
½ cup
salad cucumber (diced to size of black eyed pea)
red onion (diced to size of black eyed pea)
rinsed and drained black-eyed peas
small tomatoes (diced to size of black eyed pea)
fresh grilled corn (or 1-12 oz can crisp shoe peg corn)

Sugar Free Blush Wine Vinaigrette
Directions
Step 1
Combine all ingredients in a large bowl.
Step 2
Mix well. Best if prepared the day before and refrigerated until serving.
Step 3
Serves 4-6.
